Lemon Meringue Pie Cocktail

This week it’s Lemon Meringue Pie Cocktails – zesty, sweet and fresh – this cocktail is perfect for a hot day.

Ingredients

2 cups chilled soda water

1/3 cup lemon juice cordial

½ cup lemon curd

2 tablespoons lemon-flavoured liqueur

1 cup ice cubes

1 litre tub lemon sorbet

Whipped cream and mini meringues, to serve

Method

  1. Combine soda water, cordial, curd, liqueur and ice cubes in a large bowl. Whisk until mixture is cold. Strain into a large jug. Whisk until frothy.

  2. Place scoops of sorbet into each of four serving glasses (1-cup capacity). Pour curd mixture evenly over sorbet. 

  3. Top with whipped cream and meringues. Serve immediately. 

    TIP! We used Limoncello liqueur in this recipe. If you prefer a non-alcoholic version, replace with fresh-squeezed lemon juice.
