Preheat oven to 230C (210C fan forced). Line a large baking tray with baking paper. Arrange frozen potato gems in a single layer on tray. Bake according to packet directions or until golden and crisp.

Meanwhile, heat a non-stick frying pan over medium-high heat and spray with oil. Add mince and cook, breaking up lumps with a spoon, for 5-6 min or until browned. Add the Mexican seasoning mix and ½ cup water. Stir well and simmer for 2 min or until sauce thickens.

Sprinkle cooked potatoes with the beef mixture then the cheese. Return to the oven for a further 5 min or until cheese melts. Spoon taco salsa over the top. Serve with sour cream and guacamole and garnish with shredded lettuce, diced tomato and coriander sprigs if desired.
