Avocado Smash Burger

A scrumptious quick and easy dinner. Smashed avocado and bacon on ciabatta rolls with smoky aioli sauce.

Ingredients

SMOKY AIOLI

Method

Step 1

Make smoky aioli. Combine aioli and paprika in a small bowl. Mix well.

Step 2

Cut avocados in half. Remove seeds. Scoop flesh into a small bowl. Lightly mash with a fork. Season with salt and pepper.

Step 3

Heat an oiled, large, non-stick frying pan over a medium heat. Add bacon. Cook for about 4 to 5 minutes on each side,
or until crisp. Remove.

Step 4

Heat same frying pan over a medium to high heat. Add eggs, one at a time. Fry for about 2 to 3 minutes, or until cooked to your liking.

Step 5

To serve, divide avocado among bases of rolls. Top with lettuce, bacon, eggs and aioli. Replace tops.

Try this

You can replace bacon with smoked salmon or ham, if you prefer.
