Step 1
Grease an 18cm . 28 cm rectangular slice pan. Line base and sides with baking paper, extending paper 4cm above pan edges.
Step 2
Whisk eggs, yoghurt and parmesan in a large jug. Add ham, roasted vegetables and spinach. Season with salt and pepper. Stir to combine. Pour mixture into prepared pan. Scatter over zucchini slices, then pine nuts.
Step 3
Cook in a moderate over (180 degrees) for 30 to 35 minutes or until set and golden brown. Stand in pan for 15 minutes.
Step 4
To serve, remove warm frittata from pan onto a serving plate. Cut into pieces. Sprinkle over extra parmesan. Drizzle over oil.
