For a low-fat dessert alternative to pie this is an amazingly simply recipe that tastes great. The only catch is it is best made and served immediately. Serve this with scoops of low fat vanilla ice-cream or some aerosol cream for a real treat.

Preheat oven to 200C (180C fan forced). Line a large baking tray with baking paper.
Spray 1 sheet of filo pastry lightly with canola baking spray. Fold over in half to form a rectangle. Repeat with remaining pastry, stacking one of top of the other, alternating the folds on either side. Transfer to baking tray.
Arrange strawberry halves over pastry to fit snugly. Sprinkle with Demerara sugar and bake in the oven for 30 min or until pastry is golden brown. Cut into pieces. Dust with icing sugar to serve.
