Rocky Road

Travelling the world, you’ll find everybody has a different take on rocky road, the American version is as simple as marshmallow, milk chocolate, cherries and walnuts, and you’ll find biscuits and dried fruits added to the British version too. Whilst keeping the basics, us Aussies also add coconut or Turkish delight. This one has something for all with crunchy noodles and chopped up lollies. And, like anything with chocolate, when I offered some of this rocky road at my house it was a big hit. Darlene, Food Ed

Ingredients

Method

Line the base and sides of an 20cm square cake pan with baking paper. Prepare all the ingredients, cutting large marshmallows with scissors. Then place all the ingredients in a bowl.

Place chocolate into a microwave safe bowl and cook on HIGH (100%) power for 30 sec. Stir and repeat until chocolate is melted. Cool for a few min, pour over the marshmallow mix and stir until combined.

Spoon mixture into pan and set aside for 2 hr or until chocolate is set – if it is extremely hot, chill in the refrigerator until set. Transfer to a board and using a flat-bladed knife, cut into pieces to serve.

DARLENE’S TIPS

For a less chunky texture cut up the lollies and marshmallows or use miniature marshmallows. 

 

Replace the noodle snacks with chopped shortbread biscuits.

 

Melt the chocolate in short bursts in the microwave so that it doesn’t burn.

 

To make individual portions, set the mixture into greased muffin cups or silicone moulds.
