Potato Pizza with Rosemary

Use ready made bases or make your own for these tasty pizzas.

Make your own pizza bases with 3 2/3 cups plain flour, 7g yeast, 1 teaspoon each salt and sugar, 1 cup warm water and 1/3 cup olive oil. Mix well and knead for 5 min, before proving for 20 min.

Preheat oven to 220C (200C fan forced). Line 2 baking trays. Rinse and dry sliced potato. Toss potato with garlic, rosemary, 1 teaspoon salt and 2 tablespoons rice bran oil. Spread baking trays and bake for 20 min.

Lightly grease 3 large baking trays. Meanwhile, prepare the pizza base mix with the yeast provided and water as indicated. Knead and rest for 10 min. Shape into 6 x 15cm round bases and place onto trays.

Spread bases with sauce sachets from the pizza kit if you like, or brush with olive oil. Top each pizza with mozzarella cheese, potatoes and parmesan cheese.

Bake for 15 min. Top with extra fresh rosemary and shaved parmesan if desired.
