PINEAPPLE SALAD
Method

Heat an oiled, large saucepan over medium heat. Add onion. Cook, stirring occasionally, for about 5 minutes, or until soft. Add pork, salsa and ½ cup water. Bring to a boil. Simmer, uncovered, for about 7 minutes, or until liquid has evaporated.Â

Meanwhile, make salad. Combine all ingredients in a large bowl and mix well to combine.
3.
Heat tortillas according to the packet directions.
4.
To serve, divide pork mixture among tortillas. Top with the pineapple salad.
