No Bake Honey & Oat Energy Balls

These easy to make protein balls make the perfect snack to boost your energy.

Keep a container of these in the freezer. It’s easy just to pop a few into lunchboxes as required. Replace the chocolate chips with dried chopped fruit if preferred.

Method

1.

In a large mixing bowl, beat cream cheese until softened. Add the remaining ingredients (except white chocolate and cranberries) and mix until thoroughly combined. Cover and freeze for 10 min.

Roll 1 tablespoon portions of mixture into balls and place onto a tray lined with baking paper.

3.

Place melted white chocolate into a snap lock bag, snip the corner and drizzle the white chocolate over the balls. Decorate each with dried cranberries if desired.

TO STORE

Place into an airtight container and keep in the fridge for up to 1 week, freeze for longer storage.
