Beef & Zucchini Skewers

Jazz your sausages up with this creative skewer idea

You can chop sausages if you prefer and thread onto skewers with cherry tomatoes, sliced zucchini and button mushrooms. Don’t forget to parboil your sausages for a speedy dinner ready in no time at all.

Method

1.

Place zucchini, mint and 1 tablespoon olive oil in a bowl. Season with pepper and toss to combine. Set aside for 10 min to marinate.

Thread one end of a sausage onto a soaked wooden or metal skewer, then thread/weave on 2 slices zucchini then finally thread the other end of the sausage on. Repeat process with remaining sausages and zucchini.

3.

Heat a barbecue grill or char-grill pan over medium heat. Cook the sausage skewers for 4-5 min on each side or until sausages are browned and zucchini is tender. Serve with taztiki dip and pita breads. Garnish with lemon wedges and mint sprigs.
