- 4 ready-crumbed chicken breast schnitzels
- ½ cup tomato pasta sauce
- ⅓ cup shredded basil leaves
- 1 cup grated mozzarella cheese
- mixed salad, to serve
Heat 1 tablespoon oil in a large frying pan over a medium heat. Fry chicken schnitzels for 3 min, or until cooked through.
Place schnitzels onto a large shallow tray and spread each one with some pasta sauce. Top with basil leaves.
Divide cheese evenly over the chicken. Place under a preheated grill for 5 min, or until cheese is bubbling and golden. Serve with a mixed salad.
