Shepherd's pie with a twist
Prep: 20 Minutes - Cook: 60 Minutes - Serves 6

Ingredients

  • 1 onion, diced
  • 2 garlic cloves, crushed
  • 500g lamb mince
  • 2 carrots, peeled and diced
  • 2 cups chopped cauliflower (small bite-size pieces)
  • 505g jar rogan josh simmer sauce
  • ½ cup frozen peas
  • ½ cup roughly chopped coriander
  • 4 cups mashed potato

Method

  1. Preheat oven to 180°C. Grease a 10-cup capacity ovenproof dish with cooking spray. Heat 1 tablespoon olive oil in a frying pan over medium heat. Add onion and garlic and cook for 5 minutes. Add the mince, breaking up lumps with a wooden spoon and cook for 5 minutes, or until brown.

  2. Add the carrots, cauliflower, simmer sauce and ½ cup water. Bring to the boil then reduce heat to low and simmer, covered, for 30 minutes, or until vegetables are tender. Stir through peas and coriander and season to taste with salt and pepper.

  3. Spoon the mince mixture into prepared baking dish and top with mashed potato.

  4. Bake in the oven for 25-30 minutes, or until the filling is bubbly and potato is golden brown. Serve with pappadums and mango chutney, if desired.
