400g chicken drumsticks
300g sweet potato, cut into cubes
2 zucchini, cut into discs
1 red onion, cut into wedges
2 cloves garlic, unpeeled
1 tsp olive oil
2 tsp dried thyme
salt & pepper, to taste
100g mixed salad leaves
2 tsp balsamic vinegar
Preheat oven to 200°C.
Place chicken and vegetables in a large roasting pan and toss with oil and thyme and season with salt & pepper.
Bake for 30-40 minutes or until chicken is cooked.
Toss salad leaves with vinegar and serve with baked chicken and vegetables.
