• 3 stalks celery, thinly sliced diagonally
• 3 pink lady apples, quartered, cored and thinly sliced
• ½ cup coarsely chopped fresh parsley
• 1 cup walnuts, toasted
• 2 cups wild rocket leaves
• 2 cups mixed salad leaves
• ½ cup whole-egg mayonnaise
• 2 tsps lemon juice
To make dressing, combine all ingredients in a small bowl. Season with salt and pepper.
Combine celery, apples, parsley, walnuts and dressing in a large bowl. Add rocket and mixed leaves. Toss lightly and serve immediately.
