Ingredients

250g lamb steaks

2 tsp olive oil

1 lemon

1 clove garlic, crushed

1/2 tsp dried oregano

2 bamboo skewers, pre-soaked

2 wholemeal (or gluten-free if needed) pita wraps

2 tbs tzatziki

125g cherry tomatoes

1/2 red onion, thinly sliced

50g mixed lettuce leaves

Method

  1. Dice lamb into 3cm cubes and toss with oil, lemon zest, garlic and oregano in a bowl or plastic bag. Set aside for 10 minutes. Thread lamb onto two skewers.

  2. Heat BBQ or grill over high heat and cook lamb for about 3 minutes each side and set aside to rest.

  3. Warm bread on BBQ for a couple of minutes. Top with tzatziki, tomatoes, onion, lettuce, lamb, a squeeze of lemon and season with salt and pepper to serve.
