- 4 x 125g chicken breast steaks
- 1 tblsp Dijon mustard
- 150g shaved leg ham
- 4 slices Swiss cheese
- 500g broccoli, trimmed, cut into florets
Season chicken with salt and pepper. Heat a lightly oiled, large, non-stick frying pan over a medium to high heat. Add chicken. Cook for about 1 minute on each side, or until lightly golden. Transfer to an oiled oven tray.
Spread mustard evenly over chicken. Divide ham over top. Place 1 cheese slice on each.
Cook in a very hot oven (240°C) for about 10 minutes, or until chicken is cooked and cheese is golden.
Meanwhile, boil, steam or microwave broccoli until tender. Serve with chicken.
