Ingredients
• 8 thick slices white bread
• 75g butter, softened
• 80g sliced chorizo salami
• 8 slices tasty cheese
• 1 avocado, sliced
• 180g chargrilled capsicum, drained
• 50g baby rocket leaves, washed
Method

Spread four slices of bread evenly with butter. Turn bread over, buttered side down.

Top evenly with salami, cheese, avocado, capsicum and rocket. Season with salt and pepper.

Place remaining bread slices on top. Spread with butter. Heat a large, non-stick frying pan over a medium heat.

Add two sandwiches. Cook for about 3 minutes on each side, or until golden and cheese is melted. Remove from pan. Repeat with remaining sandwiches. Cut in half to serve.
