• ½ cup maple syrup
• ½ cup brown sugar, firmly packed
• ⅓ cup salted cashews
• ⅓ cup salted macadamias
• 1 cup salted peanuts
• ⅓ cup pistachio kernels
• 1 cup raw almonds
• 1 tsp cracked black pepper
• 1 tsp dried chilli flakes
Line a roasting pan with baking paper.
Stir syrup and sugar in a bowl to combine. Add nuts, pepper and chilli flakes. Stir until evenly coated.
Spread nuts in an even layer in prepared roasting pan.
Cook in a moderate oven (180°C) for about 25 minutes, removing tray from oven every 10 minutes to stir nuts, bringing those on the outside towards the middle. When nuts are evenly cooked and golden brown, remove from oven and cool in pan.
When nuts are cold, break into large chunks. Store in airtight containers in the fridge.
