Ingredients
2 cups self-raising flour
½ cup premium Dutch cocoa powder
1 teaspoon bi-carb soda
3 large green apples, grated
1 large ripe banana, well mashed
4 eggs, lightly beaten
¾ cup low fat milk
1 teaspoon vanilla extract
150g Nuttelex, melted and cooled
3/4 cup pure maple syrup
Method
-
Preheat oven to 180C (160C fan forced). Lightly grease and line a 20x 30cm slice pan with baking paper. Sift flour, cocoa powder and bi carb soda into a large mixing bowl and mix well to combine.
-
Make a well in the centre of dry ingredients and add grated apple along with any juices and mashed banana. Combine eggs, milk, vanilla, Nuttelex and maple syrup. Add to the mixture and stir quickly to combine.
-
Pour mixture into the prepared pan and level the surface. Bake for 25-30 min or until cooked when tested with a skewer. Cool in the pan for 5 min, turn onto a wire rack to cool completely. Serve in squares with a dollop of cream and a little grated sugar-free chocolate if desired.
