Ingredients
• 8 egg whites, at room temperature
• 250g unsalted butter, melted and cooled
• 2 cups icing sugar mixture
• 1⅓ cups almond meal
• ⅔ cup plain flour
• ¼ cup fresh passionfruit pulp
Passionfruit icing
• 2 cups icing sugar mixture
• 2 tblsps fresh passionfruit pulp
• 2 tsps water
Method

Generously spray a 12-hole friand pan (½-cup capacity) with oil.

Whisk egg whites in a large bowl until just frothy. Add butter, icing sugar mixture, almond meal, flour and pulp. Fold until smooth. Divide among prepared pan holes.

Cook in a moderate oven (180°C) for about 20 to 25 minutes, or until golden brown and cooked when tested. Stand for 5 minutes. Turn out onto a wire rack to cool.

To make icing, combine all ingredients in a bowl. Stir until smooth.

Spoon icing over friands.
