500g lamb or regular beef mince
2 spring/green onions, finely sliced
1 clove garlic, crushed
2 teaspoons each of ground coriander and cumin
2 tablespoons chopped fresh mint
8 x 25cm bamboo skewers, soaked
Cucumber Yogurt, to serve (see below)
Place mince, spring/green onions, garlic, coriander, cumin and mint in a bowl, mix together until combined. Divide mixture into 8 and shape into oval shapes. Push a skewer through the centre of each one.
Heat a char-grill pan over a medium/high heat, cook koftas for 3-4 min each side until cooked through.
Serve cooked koftas with pita/Lebanese bread, salad and Cucumber Yogurt.
Finely grate or chop 1 Lebanese cucumber and combine with 1 cup plain yogurt and a pinch of salt. Add in 2 tablespoons chopped fresh mint and season with a pinch of white pepper.
