Ingredients
1 red onion, finely diced
800g can diced Italian tomatoes
1/4 cup chopped pitted Kalamata olives, optional
2 teaspoons bottled crushed garlic
1 1/2 teaspoons dried Italian herbs
1/4 cup shredded fresh basil leaves
4 medium chicken breast fillets
1/3 cup each grated tasty and mozzarella cheese
Method

Preheat oven to 200C (180C fan forced). Spray a 2.5L capacity shallow ovenproof dish with cooking spray. Add the onion, tomatoes, olives, garlic, dried herbs and basil, mix gently to combine.

Place chicken breasts on top of the tomatoes, pushing down to nestle into the sauce. Season the chicken breasts with a little salt and pepper. Bake in the oven for 30 min, turning chicken over, halfway through cooking time.

Sprinkle the chicken with combined cheeses and season with crackled black pepper. Return to oven for a further 10-15 min or until cheese is melted and lightly browned. Garnish with fresh basil leaves. Serve with your favourite side salad or steamed greens and fresh bread.
