1kg packet shoestring oven fries or chips
500g lean beef, or pork and veal mince
1 onion, finely diced
2 cups chopped fresh or thawed frozen diced vegetables, optional
575g jar of bolognese sauce
3/4 cup grated reduced fat mozzarella
Preheat the oven to moderate 180C (160C fan forced). Arrange the chips onto a baking tray in a single layer. Bake 10-15 min. Grease a 2L baking or casserole dish.
Meanwhile, spray a large non-stick pan with cooking spray and place over a high heat. Add the mince and the onion and cook, breaking up any lumps with a fork until mince is well browned.
Add the vegetables, if using and pour over the sauce. Half fill the jar with water and add to the pan. Simmer for 5-8 min. Transfer to a greased baking or casserole dish. Top with cheese and partially baked chips.
Increase oven heat to 220C (200C fan forced). Bake for 15 -20 min or until cheese is melted and chips are crispy. Serve with a mixed green salad. Garnish with chopped parsley and paprika if desired.
