Toast it: To toast coconut, sprinkle over an oven tray. Cook in a moderate oven (180°C) for about 5 minutes, or until lightly browned. Remove and cool.
• 450g packet family-size white microwaveable rice
• 400ml can coconut milk
• 1 cup milk
• ¼ cup brown sugar, firmly packed
• 1 tsp vanilla bean paste
• 5 fresh passionfruit
• ½ cup flaked coconut, toasted
Heat rice according to packet directions. Transfer to a large saucepan.
Add coconut milk, milk, brown sugar and vanilla. Place pan over a medium heat. Stir until sugar is dissolved. Bring to boil. Boil, covered, stirring occasionally, for about 15 minutes, or until thickened.
Halve passionfruit and remove pulp.
Divide warm rice among four dishes. Spoon over passionfruit. Decorate with coconut.
