Note: Chill for 6 hours, 30 minutes.
2 1/4 cups unsweetened almond milk
1/2 cup white chia seeds
1/3 cup cocao powder
1/4 cup coconut syrup
400ml coconut cream, well chilled
1 cup fresh mixed berries, like raspberries and blueberries
shaved dark chocolate, to serve (optional)
Place unsweetened almond milk, white chia seeds, cocao powder and coconut syrup into a bowl and stir to combine. Cover and chill for 6hr, longer if you like.
Divide among 4 serving glasses and chill again until required. Meanwhile, make a small cut with a can opener in the base of the coconut cream and drain away the liquid. Open the can and place the remaining thick coconut cream into a bowl and beat with electric beaters until thick.
To serve, top each serve with a little whipped coconut cream, fresh berries and dark chocolate.
