Ingredients
750g lean beef mince
495g jar beef stroganoff simmer sauce
2cups frozen peas, corn and carrot mix
2 cups grated tasty cheese
1kg bag frozen potato gems

Preheat oven to 200C (180C fan forced). Grease a 3L shallow ovenproof dish with cooking spray. Heat 2 teaspoons oil in a large frying pan over high heat. Add mince and cook for 6-7 min, breaking up lumps with a spoon. Drain any excess liquid.

Add the simmer sauce, then add 1/3 cup water to the empty jar and shake well. Add liquid to pan along with vegetables and season with 1 teaspoon cracked black pepper. Bring to the boil then reduce heat to low and cook for 10 min. If making ahead of time, allow mince to cool completely now.

Spoon mince into prepared pan and sprinkle with cheese. Arrange potato gems over the top and bake for 45-50 min or until gems are golden brown. Serve with side salad.
