8 frozen spring roll wrappers, thawed
2 tablespoons brown sugar
4 scoops vanilla ice cream
½ cup dark chocolate dessert sauce, warmed
Peel bananas, half lengthwise then cut each piece in half again to give you 8 pieces all up. Fill a deep-fryer or large saucepan one-third full with oil and heat over medium heat to 170C.
Lay 1 spring-roll wrapper flat on a clean surface. Place 1 piece of banana diagonally across the corner of wrapper and sprinkle with a little brown sugar.
Fold in sides then roll up tightly to enclose filling. Brush edges with a little water and press to seal. Repeat with remaining wrappers, banana and brown sugar.
Shallow fry the bananas in hot oil for 4 min, turning halfway through or until evenly browned all over. Remove with a slotted spoon and drain on paper towel.
Serve hot or warm with vanilla ice cream and dark chocolate dessert sauce. Garnish with a few strawberries if desired.
