• 250g dried pasta shapes
• 500g jar tomato pasta sauce
• 2 garlic cloves, crushed
• 3 zucchinis, sliced
• 3 pieces short-cut bacon, trimmed and chopped
Cook pasta in a large pan of boiling salted water for 6-8 minutes or until tender. Drain well and return to the pan. Cover to keep warm.
Meanwhile, empty pasta sauce into a separate pan, rinse jar with ½ cup water and add this to the pan. Stir in garlic and zucchini, bring to simmering point and simmer for 3-5 minutes. Sauté bacon in a non-stick pan.
Combine pasta and sauce, season to taste with pepper and divide into bowls. Top with bacon. Garnish with parsley or fresh basil if desired.
