Ingredients
1 tablespoon of caster sugar
2 fresh rosemary sprigs
1/3 cup boiling water
1 cup fresh blood orange juice
1/4 cup red Campari
750ml bottle Prosecco, chilled
Orange wedges or fresh rosemary sprigs, to decorate

Spoon caster sugar into a large heatproof jug, add fresh rosemary sprigs and pour over boiling water. Stir until sugar is dissolved.

Add fresh blood orange juice and red Campari, and stir to combine, chill for 30 min.

Half fill 6 large cocktail glasses with crushed ice. Divide the orange juice mixture between the glasses. Top with chilled Prosecco. Serve with orange wedges and rosemary sprigs if desired.
