Ingredients
1.5kg chicken wings
1 teaspoon each sea salt flakes and cracked black pepper
1 tablespoon finely chopped ginger
1 tablespoon finely chopped garlic
2 tablespoons light soy sauce
2 tablespoons mirin

Preheat oven to 200C (180C fan forced). Line a large baking tray with baking paper. Remove the tips from the chicken wings, discard, then cut each wing at the joint.

Season chicken all over with salt flakes and cracked pepper. Arrange in a single layer on the tray and bake in a oven for 35-40 min, or until cooked. Turning once during cooking time.

Meanwhile, in a large bowl, combine chopped ginger and garlic, light soy sauce and mirin. Place the cooked wings into the bowl with the dressing and toss to coat.

Serve with cooked rice or noodles. Garnish with chopped spring/green onions.
