Ingredients
8 thin beef sausages
440g can pineapple pieces in syrup
1 tablespoon cornflour, combined with 1 tablespoon water
1/3 cup tomato sauce
2 tablespoons brown sugar

Preheat oven to 180C (160C fan forced). Spray a shallow 2.5L casserole dish with cooking spray. Heat a frying pan over medium-high heat and spray with oil. Brown sausages all over for 5 min. Cut in half then place into prepared dish.

Drain the juice from the canned pineapple into a jug, add enough water to make 1 cup. Stir in the cornflour mixture, tomato sauce and brown sugar.

Pour the sauce over the sausages, cover with foil, bake for 20 min. remove the foil, add pineapple and bake for a further 10 min. Serve with broccolini or other seasonal green vegetables.
