Balsamic lamb |

| Ingredients |

|
- 6-8 lamb leg chops
- 2 tablespoons balsamic dressing
- 1 onion, sliced
- 400g can cherry tomatoes
- 2 tablespoons tomato chutney
- 1/3 cup crumbled fetta cheese
- 1/3 cup pitted black olives

| Instructions |

1. Preheat a barbecue hotplate or grill pan over high heat. Combine chops and dressing in a bowl and toss to coat. Cook for 5 min each side or until cooked to your liking. Remove from pan, cover and allow to rest for 5 min.
2. Meanwhile, heat 1 tablespoon of oil in small pan. Add onion and cook for 2 min. Add tomatoes and tomato paste. Simmer for 2 min.
3. To serve, place chops onto serving plates and top with tomato mixture and sprinkle with fetta and olives. Garnish with chopped fresh parsley and serve with a spinach, parmesan and pine nut salad.
