How do I get the perfect pudding? |

- The pudding mixture should be fairly wet and drop easily from the spoon.
- Traditionally, everyone in the house should stir the pudding and make a wish.
- Grease the steamer/basin well and line the base.
- Vary the flavour with grated orange rind, or use less water and more spirits.
- If you don't have a steamer, use an enamel or china bowl. Place mixture into greased bowl, place entire bowl in a large oven bag, seal the bag and place in a second one. Seal and steam as directed.
- Place the pudding on a trivet in the pan to prevent the base from burning.
- Let it stand for a few weeks to develop flavours. Store in the bowl it was steamed in or invert onto a plate and cover with plastic wrap. Chill until required.
- Keep water level 2/3 up the side of the pudding and keep the pan covered. Top up water as required during cooking.
