Ingredients |
- 1/3 cup garlic mayonnaise
- 1 tablespoon capers, drained and roughly chopped
- 4 sun-dried tomatoes, finely chopped
- 1/2 small red onion, finely chopped
- 185g can tuna chunks in olive oil, drained
- 4 x 2cm thick slices sourdough bread, halved
- 2/3 cup sharp cheddar cheese, grated

Method
- Preheat the grill to high. Mix together the mayonnaise, capers, tomatoes and red onion. Place tuna in a bowl and mix with half the mayonnaise mixture.
- Lightly toast the sourdough and then place on a baking sheet. Divide the tuna mixture between the toast, top with cheese.
- Cook under the grill until golden and bubbling. Serve with a mixed green salad and the remaining mayonnaise mixture. Garnish with chopped chives and serve with lemon wedges.
