A quick and easy gourmet meal at anytime of day.

  • 1/3 cup garlic mayonnaise
  • 1 tablespoon capers, drained and roughly chopped
  • 4 sun-dried tomatoes, finely chopped
  • 1/2 small red onion, finely chopped
  • 185g can tuna chunks in olive oil, drained
  • 4 x 2cm thick slices sourdough bread, halved
  • 2/3 cup sharp cheddar cheese, grated


  1. Preheat the grill to high. Mix together the mayonnaise, capers, tomatoes and red onion. Place tuna in a bowl and mix with half the mayonnaise mixture.
  2. Lightly toast the sourdough and then place on a baking sheet. Divide the tuna mixture between the toast, top with cheese.
  3. Cook under the grill until golden and bubbling. Serve with a mixed green salad and the remaining mayonnaise mixture. Garnish with chopped chives and serve with lemon wedges.
