Ingredients |
- 1 tablespoon each hoi sin sauce and brown sugar
- 1 1/2 teaspoons five spice powder
- 450g lean pork fillet
- 6 cups chicken stock
- 3cm piece fresh ginger, sliced
- 2 each star anise and garlic cloves
- 1 bunch baby bok choy, sliced
- 180g packet soba noodles

Method
- Preheat oven to 180C (160C fan forced) and line tray with baking paper. Combine hoi sin, brown sugar and five spice powder. Brush over pork, bake 20-25 min or till cooked through. Stand for 10 min then slice thinly on the diagonal.
- Place stock, ginger, star anise and garlic into a pan. Season to taste with soy sauce. Bring gently to boil, remove from heat and let steep, covered, 20 min. Strain, return to pan.
- Return stock to boil, add bok choy and noodles, simmer over medium heat for 2 min, breaking up noodles with a fork. Divide noodles and bok choy between bowls, top with sliced pork, pour over broth.
- Garnish with coriander sprigs.
