- Preheat the oven to 190 C. Spray a deep, 9-cup capacity baking dish with rice-bran oil. In a large bowl, mix the flour and sugar. Add eggwhites, milk and Nuttelex. Stir to combine.
- Fold in the chopped dates and add the mixture to the prepared baking dish and spread evenly to completely cover the base. Sprinkle over the remaining cup of brown sugar and then pour over 2 1/2 cups boiling water.
- Bake for 40 min or until the centre of the pudding springs back when lightly touched. Serve each portion of pudding with a scoop of low-fat, vanilla ice-cream.
