Description

A yummy family meal perfect for a Sunday lunch with your family during the festive season.

Ingredients

  • 4 steaks (we used scotch fillet)
  • 1/3 cup good-quality pesto
  • 2 tablespoons shredded or grated parmesan cheese

Method


  1. 1. Preheat a barbecue grill plate over medium-high heat. Make a horizontal cut in the side of each fillet, being careful not to cut all the way through.
  2. Combine pesto with parmesan cheese and spread the mixture evenly on the insides of each pocket then press closed.
  3. Brush the steaks with oil and season with salt and pepper.
  4. Cook the steaks for 5-7 min on each side over direct heat, turning only once during cooking, or till cooked to your liking. Serve with roast potatoes and a rocket and red-onion salad.
