Ingredients |
- 4 steaks (we used scotch fillet)
- 1/3 cup good-quality pesto
- 2 tablespoons shredded or grated parmesan cheese
|

Method
- 1. Preheat a barbecue grill plate over medium-high heat. Make a horizontal cut in the side of each fillet, being careful not to cut all the way through.
- Combine pesto with parmesan cheese and spread the mixture evenly on the insides of each pocket then press closed.
- Brush the steaks with oil and season with salt and pepper.
- Cook the steaks for 5-7 min on each side over direct heat, turning only once during cooking, or till cooked to your liking. Serve with roast potatoes and a rocket and red-onion salad.
