- Preheat oven to moderate 160C (140C fan forced). Line 2 flat trays with baking paper. Cream butter and sugar until light and creamy, about 2 min.
- Add eggs and vanilla and mix together, add in flour and passionfruit pulp and mix to a soft dough. With wet hands shape portions into walnut size pieces and place onto baking trays. Allow room for spreading.
- Bake for 20 min or until pale and golden. Cool and top with Passionfruit Icing.
Sift 2 cups icing sugar into a bowl, add the pulp of a passionfruit and enough hot water to make a soft icing mixture.
