1. Bring a large saucepan of water to the boil, add pasta and cook according to directions or until al dente. Drain and keep warm.
2. Roughly chop the tomatoes and place flesh into a small saucepan. Add the garlic, olive oil, lemon zest and juice, vinegar and basil to saucepan. Season to taste.
3. Warm sauce over a low heat for 5 min. Toss through pasta and serve immediately in serving bowls. Garnish with extra basil leaves and a sprinkle of parmesan if desired.
