Ingredients |
- 2 tablespoons mild Indian curry powder
- 450g lamb leg steaks, cut into 3cm cubes
- 400g can diced tomatoes
- 2 tablespoons cooking cream
- 2 cups chopped green beans

Method
- Blend the curry powder with a little water to make a paste. Heat a large saucepan over medium heat and spray with olive oil. Add curry paste and cook for 30 sec.
- Add lamb and cook, stirring for 3 min or till seared. Add tomatoes and 1/2 cup water and bring to the boil, reduce heat, cover and simmer for 30 min or until the lamb is tender.
- Add the cream and beans, cook uncovered for a further 5 min or until the beans are tender. Serve curry with basmati rice and garnish with fresh herbs.
