- Preheat oven to 200C (180C fan forced) and line a baking tray with baking paper. Place fish onto tray and season with salt and pepper.
- Place tomatoes, lemon juice and zest into a bowl and stir to combine. Spoon evenly over fish fillets then sprinkle with feta cheese.
- Bake for 12-15 min or until fish is cooked through. Serve with steamed chat potatoes and greens. Garnish with basil leaves and black olives if desired.
This dish is great with fish and prawns. Try it with chicken breast fillets for something a little different.
