1. Lightly spray fish with olive oil and season with salt and pepper. Set aside. Combine, mango, pineapple, spring/green onion, chilli, herbs and lime zest and juice. Gently toss to combine.
2. Preheat a barbecue hotplate or frying pan over medium-high heat. Cook fish for 3-4 min each side or until cooked through.
3. To serve, place fish onto serving plates, top with mango salsa and serve with baby cos leaves and sweet chilli sauce.
