Easy Australia Day desserts

We've got your Australia Day desserts sorted with our delicious recipes.

Pavlova Passion Roll
Grease and line a 23 x 30cm Swiss roll pan. Beat 4 eggwhites to soft peaks, adding 1/2 cup caster sugar. Beat until glossy. Spread into pan and bake at 160 C for 10-15 min. Turn pavlova onto a second sheet of paper dusted with caster sugar. Remove the baking paper. Cool for about 5 min.

Beat 1 cup thickened cream and add a little sugar. Spread over the roll and drizzle with 1/2 can of passionfruit pulp. Roll pavlova lengthways and then chill. Top with cream, passionfruit and strawberries. Serves 6.

lamington recipesLamington Top Choc Muffins

Prepare a 500g packet chocolate muffins according to directions and spoon into 2 greased 12-capacity mini-muffin pans. Bake according to directions. Cool. Top with 1 cup chocolate frosting. Sprinkle with desiccated coconut and top with a Jaffa. Makes 24.

anzac biscuitsAnzac Muesli Biscuits
Cream 150g butter with 1 1/2 cups brown sugar. Add 2 eggs and 1 teaspoon vanilla paste. Sift in 3/4 cup plain flour and 1/2 teaspoon bicarb soda. Mix with a wooden spoon. Add 1 3/4 cups each toasted muesli and rolled oats. Drop teaspoonfuls of dough on lined baking sheets 5cm apart. Bake at 180 C 8-10 min, or until golden. Makes 60.
