Ingredients
1 medium cauliflower bunch
1/4 cup plain flour
1 1/4 cups low-fat milk
1/2 cup Swiss cheese, grated
parmesan cheese and dried breadcrumbs to serve
Method
Chop a medium cauliflower into florets, place in microwave safe dish. Cover with plastic wrap, steam 5 min on high.
Mix 1/4 cup each plain flour and low-fat milk to form smooth paste. Transfer to pan, add a further 1 cup milk. Whisk over low heat until thick. Add 1/2 cup grated Swiss cheese.
Pour over cauliflower, top with 2 tablespoons each shredded parmesan and dried breadcrumbs.
Bake at 180C (160C fan forced) for 30 min or until golden brown and bubbly.
