- Preheat the oven to 220 C (200 C fan forced). Line 2-3 baking trays with baking paper. Place one sheet of pastry on one lined tray. Leave a 2cm border and spread with 2 tablespoons mustard, cover half the pastry with 1/3 each of the bacon and cheese.
- Fold pastry over to enclose and use a fork to press edges together. Cut two 4cm long slits in the centre of the pastry for ventilation. Brush top with egg. Repeat with remaining pastry and ingredients.
- Bake turnovers in oven for 25-30 min or until puffed and golden. Allow to stand for 5 min, cut into squares and serve with a rocket and parmesan salad if desired.
TIP Add a single layer of tomato slices between ham and cheese. Or substitute cranberry sauce for mustard and use sliced turkey and Camembert cheese.
