Peel and cut potatoes into bitsized chunks.
Boil until just soft.
Boil eggs unitl hard and slice.
Dice bacon and onion and cook in a frypan until brown.
In a serving dish layer potato, onion and bacon, egg, salt and pepper and mayo.
Keep layering until all ingredients are used. I like to finish with a bacon and onion layer with a couple of slices of egg in the centre and a swirl of mayo on the top.
